Hi Shelley.
In your situation, I would look for a case that is as short as possible for ease of getting a fired case out of the action. If you're looking for something to use on Texas deer and coyotes, a 25BR or a 250 Savage Ackley Improved would be good cases to look at. Stan built a 250 Savage Ackley hunting rifle for me that is quite impressive...velocity is as much as the 257 Roberts Improved with bullet weights up to 100 gr. The 257 Roberts Improved ( or as I call it, a '257 Better Bob' 
) runs virtually the same speed as the 25-06 until you get into the 120-ish bullets, so you can see how impressive the 250 Savage Ackley is. With the lighter 75 gr. and 87 gr. Sierra bullets, my 250 Savage Ackley is within 200 fps. of a 25-06 with comparable bullet weights.
IMO, a 25BR or 250 Savage Ackley with a 1:10 and a Nosler 100gr. BTip would be a stone cold killin' machine .
In your case (single shot action), I would give the nod to the 25BR...great brass, easy die situation, etc. Jackie Schmidt from your area did some work with a 25BR a while back...maybe he has a reamer, dies, etc?
